This one is super simple but looks really impressive with all of those bright colours. A great accompaniment to a main meal or put it together with a few other salads to impress your dinner guests!
- 500 g strawberries/red radishes (depending on the season)
- 500 g green asparagus
- A piece of Parmesan (to be added according to personal taste)
- Olive oil
- Salt and pepper
- Cress as a garnish
Cook asparagus in slightly salted water, until it is firm to the bite. Wash and slice strawberries. If you react to strawberries, or they are not in season, substitute for red radishes.
For the dressing, prepare the olive oil, along with a few drops of balsamic vinegar, salt and pepper.
Hand-chop the cress and add them to the dressing.
Drizzle dressing over the cooled asparagus mixed with the strawberries/red radishes.
Add a few Parmesan shavings to finish.
